Two Great Southern Prepared Chicken Recipes

Do you ever have the taste for a great easy to fix meals? Does your mouth sometimes water to think of the very best chicken of all times? Wouldn't you really like to try something a little different in your meals? Well, think no more. Want no more. There is no reason why you will ever have to worry yourself about good tasting chicken.

Here are two of my family secret recipes. Please try them and enjoy their taste.

HONOLULU CHICKEN

  • 8 chicken thighs
  • 1 lg onion, chopped
  • 1/4 cup plain flour
  • 5 T. soy sauce
  • 1/2 cup oil
  • 1 6oz.water chestnuts,drained and sliced
  • 1 16 oz. jar apricot preserves
  • 1 1/2 cup Kraft Barbecue sauce
  • 1 large bell pepper sliced
  • 1 pot hot cooked rice

  • Thinly coat chicken with the flour. In Dutch oven, brown the chicken in oil; drain; discard the oil. Return chicken to the pan. In a large bowl, combine and mix well the preserves, barbecue sauce, onion, and soy sauce. Pour over the chicken. Bring to a boil, reduce heat to simmer, cover and cook 50 minutes, turning the chicken pieces twice, scraping the bottom of the pan. During the last 15 minutes, add the bell pepper and water chestnuts, making sure they are covered with sauce. Serve over hot rice.

LUSCIOUS LEMON CHICKEN

  • 6 chicken thighs
  • 1 tsp. paprika
  • 1/2 cup plain flour
  • 1/2 tsp. coarse ground black
  • 2 T. oil
  • pepper and salt to taste
  • 2 cans cream of chicken soup
  • 1 can water
  • 1/2 tsp. crushed tarragon leaves
  • 5 T. real lemon juice
  • hot cooked rice

  • Lightly coat chicken pieces in the flour (to prevent excessive splattering). In a skillet, brown the chicken; discard the oil. In a bowl, mix well the soup, water, lemon juice, paprika, pepper, salt, and tarragon leaves. Pour over chicken. Bring to a boil, reduce heat to simmer, cover, and cook 40 minutes. Stir and turn chicken occasionally. Serve over hot cooked rice. Garnish with parsley tops and thin lemon slices.

These two chicken recipes will surely wet your taste for the best chicken on earth. They are easy to prepare, easy to serve, and will be a great pleasure to serve to your family.
